Who is PatsyPie?
Pat Libling or PatsyPie, as she is fondly known, was diagnosed with celiac disease in 1987. Two of her daughters were also diagnosed with gluten intolerance. Over the years, Pat and her daughters put seemingly every gluten-free product available to the test, but rarely did any measure up in taste, texture or quality to regular bakery or store-bought goods.
Finally, Pat took matters into her own hands. PatsyPie gluten-free cookies, gluten-free biscotti, and gluten-free brownies are the yummy result!
First introduced with resounding success to
bakeries, specialty shops and health food stores in the Montreal area, Pat is now pleased to offer you her popular PatsyPie gluten-free cookies, gluten-free biscotti, and gluten-free brownies on-line.
In addition to her baking, Pat has also consulted on celiac disease with individual clients and dietitians who have sought her advice on cooking, shopping and coping with the condition. She has also lectured to groups on how to enjoy eating, despite the gluten restriction.

Because of Pat’s and her daughters’ gluten intolerance, their health and well-being depend on it. Our bakery is 100% gluten free!

Indeed, every yummy treat we offer has been adapted from favorite recipes -- time-honored delights guaranteed to satisfy from first nibble to last. Even people who don't need to eat gluten-free will love PatsyPie gluten-free cookies, biscotti, and brownies. In fact, they won't even realize the gluten is missing.
How did you come to name your bakery PatsyPie?
It's the nickname a boyfriend gave Pat early on in their relationship. And yes, she married the guy!
Do PatsyPie gluten-free cookies, biscotti, and brownies contain preservatives or hydrogenated fats?
No. All ingredients are clearly listed on the label and in the product description as shown on www.PatsyPie.com. What you see on the label is what you get.
How long do your products keep?
Our gluten-free biscotti have a shelf-life of up to nine months and our gluten-free cookies six months from the day they are baked. Just be aware that gluten-free baked goods tend to become crispier and crunchier much faster than ordinary baked goods, but the taste and enjoyment remain undiminished. Our gluten-free double chocolate mini brownies have a shelf life of up to nine months when stored frozen. Out of the freezer, they are best eaten within two weeks.
Do you bake gluten-free pies?
Despite our name, we are not currently offering pies for those with gluten intolerance . But we are working on it!
